Spicy Roasted Cauliflower with Roasted Salmon

My Ultimate Favorite!

Serves 3

Cauliflower 
1 head Cauliflower chopped
1 medium red onion or couple shallots sliced in big chunks
3-4 garlic cloves finely chopped 
Himalayan salt 
Black Pepper
Crushed red pepper
Avocado oil

Preheat the oven to 425 degrees F 
Grease a baking sheet with oil. Mix cauliflower with the rest of the ingredients in the baking sheet. Roast cauliflower for 35-40 min (20 min convection oven) Let it broil for another 3 min for crispiness  if you prefer. 

Salmon
1 1/2 pounds of salmon (1/2 lb per person)
Avocado oil
3-4 garlic gloves final chopped 
Himalayan salt
Black pepper or any other seasoning, you can also can sprinkle with wine
Half a lemon sliced in wedges

Rub salmon with avocado oil in another glass pan, skin side down. Season, put lemon wedges on top of salmon. Roast on the bottom rack for 12 min (9 min convection oven). Basically it is 4-6 min per half inch thickness.
