Meatball Soup

Serves 6

1 pound Ground Beef
couple slices of Bread without crust
some Milk
2-4 Potatoes chopped
1 Onion
2-3 Carrots
1 Bell pepper
4-6 oz Thin Soup Noodles like German Bechtle Thin Soup Egg Noodles
Himalayan Salt
Black Pepper
2 Bay Leaves
Green Onions or Parsley chopped

Boil 14 cups of water in an 8 Qt pot.
Meanwhile, chop the onion, bell pepper and carrots. You have an option to sauté it for 5 min (it is tastier), or after the water has been boiled just put the veggies into the pot and boil for 5 min-7 min (it is healthier). I only do the tastier part. If it has been done in a pan, still boil it for 5 min.

Meatballs
In a bowl, using fork, mix bread with milk in order to become mushy, then add the ground beef to the mixture. You can add even more milk, it makes the meat tender. Mix well, add salt and pepper. Form the meatballs.

After the veggies has been boiled for 5 min, place the meatballs and potatoes in the pot. Boil on medium heat for 12-15 min. Place the noodles in the last minutes of boiling according to the package instructions.
Add the bay leaves, salt and pepper before turning the fire off.
Sprinkle with green onions or parsley and serve hot.
