Honey Glazed Salmon with Summer Salad

Serves 2-3

For the Salmon

olive oil
2-3 garlic cloves finely chopped
1/4 cup soy sauce
1/2 juiced lemon
1 tsp liquid honey
1/2 tsp brown sugar in the raw
himalayan salt, black pepper, red pepper flakes according to your taste
3 fillets of salmon

Marinate salmon in a glass bowl for at least an hour.
If you wish you can saute the garlic in a small skillet with olive oil until its beginning to brown over medium heat.
Mix all ingredients in the bowl adding 1/2 teaspoon of olive oil. Cover salmon in the marinate and refrigerate for the next hour.
Meanwhile you can make the salad. It only will be better when it sits for an hour.

To finish salmon, heat olive oil in the pan, use medium heat. Place salmon in the skillet skin side up, pour over some marinate, place the lid on the skillet. Cook 2-3 min per side. When turning pour a little bit more marinate.


For the Summer Salad

6 organic Persian Cucumbers
3-5 tomatoes
1/4 sliced red onion
olive oil (sour cream is optional)

Chop everything and mix in a bowl. Refrigerate for an hour.
Serve with a salmon.
