Roasted Bell Peppers and Red Onions
Serves 2
For the Bell peppers and Onions
2 large Bell Peppers any color, cut in 1 inch chunks
1 large Red Onion, cut in wedges
Himalayan Salt, Black Pepper
Avocado Oil

Preheat the oven 400 F.
1. Wash, cut and pat the bell peppers dry. Cut the onions.
2. Spread the vegetables on the baking sheet. Drizzle avocado oil on top of it. Salt and pepper the vegetables according to your taste. Mix well using your hands.
3. Roast for 15 min. Take it out from the oven and stir, if needed. Roast for another 10 min. Check it again. It might need another 5-10 min to get slightly burned and caramelized.
This is very good side dish to serve with the chicken or meat.
