1. First, preheat your cast iron skillet over low heat for 5 minutes. After the skillet is sufficiently preheated, add in a few tablespoons of olive oil and turn the heat to medium-high.
2. In a bowl, toss you potatoes with a tablespoon of olive oil, salt, pepper, and rosemary - make sure the potatoes are completely coated and the seasonings are evenly distributed. Keep the garlic on the side for now.
3. When your skillet is sufficiently hot, pour in the potatoes. With a pair of tongs, try to turn each potato so that the cut side is facing down. This isn’t 100% necessary, but it will ensure that you get really nice, brown potatoes. Cook with the cut side down for 5 minutes - then, give them a stir and cook for another 5 minutes. After the potatoes have been cooking for 10 minutes or so, give them one more stir and add in the garlic with them. Cook for 5 more minutes or until you can easily pass a fork through a potato.
