Spicy Tofu Veggie Roasted Tray Recipe

Ingredients:

2 tsp Cayenne Pepper 

1 tsp Dried Oregano

1 tsp Ground Ginger

2 tsp Garlic Powder

2 tsp Sweet Smoked Paprika

2 tsp Maple Syrup

Salt & Pepper

Juice & Zest of 1 Lemon

Avocado Oil

1 block Firm Tofu, cut in 1/2" cubes or steaks

3 red Bell Peppers, cut into rings 

1-2 red Onions, cut

1 box of Cherry Tomatoes, cut in half

4 Corns on the cob, halved

1 Purple Potato, chopped in 1/2" size


Instructions:

Preheat the oven 375- 400 F. 

Cut the Tofu, pat it dry. Cut the veggies. 

Mix everything together. Roast 35-45 min. Use the fork to see if the potatoes are cooked. Once they are done, the dish is ready to serve. Enjoy!


Tip:

Keep fresh tomatoes at room temperature, away from direct sunlight, and eat them within a few days of picking them off a vine or bringing them home from the market.
