White Bean, Sun-Dried Tomatoes & Arugula Salad

 serves 3-4

Ingredients:

1 can 15.5 oz cannellini beans (or pre-made from before), well rinsed

olive oil

1 red onion, sliced or chopped

2 ounces sun dried tomatoes in oil, drained and chopped

4 garlic cloves, minced

red pepper flakes (optional)

black pepper

4 ounces Arugula


Instructions:

Heat the 2 Tsp of olive oil in a 12-inch sauté pan over medium-high heat. 

Add onions and cook for 5 min, stirring from time to time. 

Add garlic - cook for 30 seconds. 

Add the sun-dried tomatoes, red pepper flakes, black pepper and cook for 2 min. Add a little bit of oil from the sun-dried tomatoes, about 1Tbsp. Give it a stir.

Add the beans, cook for another 2 min, just to warm up the beans.

Serve with arugula.
