Low Calorie Vegetable Veggie Soup

 Ingredients:

1 -2 Red Onions chopped

Olive Oil or water

4-5 Carrots chopped

1 stalk Celery chopped

6 Garlic cloves chopped

Water or low sodium vegetable/ chicken/ beef stock or Better Then Bouillon - your preference

1/2 Cabbage finely shredded 

2 small yellow Italian Squash chopped

1-2 cans diced tomatoes

Italian herbs, Oregano, Thyme, Salt, Pepper

1/2 bag of Spinach


Instructions:

1. Heat olive oil. Sauté onion for 20 min on low.

2. Add carrots and celery. Sauté for 5-10 min.

3. Add garlic. Sauté - 1 min.

4. Add cabbage, squash, water, stock and bouillon. I add all 3 for a better taste. Add 2 cans of diced tomato. Bring to a boil, lower the heat and cook for 20 min until the squash is ready. 

5. Optional. Add spinach at the end and cook for the last 2 min till they melt.
