White Bean Soup With Turkey and Kale
Ingredients:
olive oil
1-2 onions, chopped
2-3 carrots, chopped
kale, 1 small bunch, sliced (soak for 10 min in baking soda, rinse)
1 Tbsp tomato paste
1 tsp ground cumin
red pepper flakes, to taste
1/2 -1 pound ground turkey
4-5 garlic cloves, minced
1 tsp salt
1 quart chicken stock
2 (15 oz) cans white beans, drained and rinsed
2-3 Tbsp Better Than Boullion Beef
1 small lemon
Herbs, parsley, dill (optional)

1. Heat a large pot over medium high heat, add oil. Add onions, carrots and sauce 7-10 min.
2. Soak the kale in baking soda for 11 12 min, rinse thoroughly. Chop.
3. When the onions are golden, add
tomato paste, cumin, red pepper flakes and saute for 1 min.
Add turkey, garlic, 1 tsp salt and saute 4-7 min, breaking the turkey.
4. Add chicken stock and beans, bring to a boil. Then simmer 15-25 min. Add salt if needed.
5. Add kale and Better Than Boullion to the pot. Add a little bit more water. Simmer for 5-10 min.
6. Stir lemon juice and herbs into the pot.
