Roasted Artichokes with Garlic Aioli
Ingredients:
2 Artichokes
1 Garlic clove, not peeled
Salt & Pepper
For Aioli:
5 Garlic cloves, minced
1 Tbsp freshly squeezed Lemon
3/4 cup Mayonnaise
1/2 tsp Dijon mustard

1. Clean and trim the artichoke. Cut the stem leaving 2 inches, cut the top up to 1/2"-1". Split the artichokes in half, take the hairs out = remove the choke.
2. Boil for 10 minutes in a large pot with squezzed lemon wedges.
3. Add the artichoke to the glass baking dish. Season with salt and pepper. Flip the artishoke cut side down. Spread unpelled garlic cloves to the dish. Cover with foil.
Roast at 475F for 25-30 min.
4. For Garlic Aioli mix all the ingridiends together.Recipe For Happiness!
