Wheat Berry Salad


Serves 5-6

For the Wheat Berries

3/4 cup uncooked Wheat Berries
3 cups Water

For the Salad

1 chopped Bell Pepper any color
1 chopped very small Broccoli around 1 cup
1 chopped Tomato
1 cup chopped Cauliflower
1-2 chopped Green Onions
1/2 cup or more Feta Cheese, according to your taste

For the Dressing

1/3 cup good Olive Oil
2 Tbsp Mayonnaise
2 Tbsp Apple Cider Vinegar
1/2 tsp Himalayan Salt
1/2 tsp Pepper
1/2 tsp garlic Powder, optional

1. Wash wheat berries.
    Soak them in the pot for 30 min with 3 cups of water.
    Bring to a boil, then simmer for 55 minutes.
    Drain and rinse with cold water

2.  Mix all the ingredients for the salad in a large bowl.
     In a separate small bowl mix the ingredients for the dressing. Pour the dressing over the salad. Mix well and serve, or you can refrigerate it for an hour or so. Then it's going to be juicier.

P.S Keep uncooked grains in their unopened packages or transfer to airtight container (I use Masons Jars) and store in a cool, dark, dry place. If storing for longer then a month keep them in the refrigerator or freezer. Like nuts, grains contain natural oils, so they can spoil.
