Buckwheat with Vegetables

1 cup Buckwheat, rinsed
1 Onion, chopped
1-2 Carrots, chopped
1 Bell pepper, chopped
1 Tomato, chopped
1 cup Green beans, cut in half
1-3 JalapeƱos, if you like spicy
Salt and Cayenne pepper according to your taste
Avocado Oil


1. Rinse and drain buckwheat.

2. Heat Avocado oil in a large pan over medium heat until hot.

3. Cut Onion and Carrots, fry in the pan until they are half done.

4. Add Green Beans to the pan, cover with a lid and simmer on a medium-low for 5 min.

5. Add Bell Pepper and JalapeƱos, simmer for 2 min.

6. Add Buckwheat and 2 cups of water. Salt, Cayenne pepper and top with the Tomatoes. Cover with the lid and simmer the buckwheat according to the cooking instructions.

Enjoy!

You can serve it with the Broiled Fish Fillets.
