Easy All-in-one One Pot Bell Peppers, but not Stuffed

 For 10 people

Ingredients:

1 lb ground turkey

1 lb ground beef (90% lean)

3-4 cups diced bell peppers

1 cup red diced onion

2 teaspoons Italian seasoning or any preferred one

1 teaspoon salt

1/2 teaspoon pepper

6 garlic cloves, finely chopped

4 cups (1pk) beef broth

2 cans diced tomatoes, undrained

1 can tomato sauce

2 tablespoons soy sauce

2 cups uncooked basmati rice

Directions:

1. Add beef, turkey, onion, bell pepper, Italian seasoning, salt, pepper to a large Dutch oven over medium-high heat. Cook for 10 minutes, stirring frequently until the beef is browned and veggies are softened.

2. Add garlic. Cook for 1 min. Stir.

3. Add the beef broth, tomatoes, tomato sauce and soy sauce. Stir until the mixture is well combined, and heat to a boil.

4. Add the rice and upon returning to a boil, reduce the heat to low. Cover the Dutch oven and allow to simmer for 25 minutes.
