Ground Turkey and Snap Peas in a Skillet

Ground Turkey with peas
 Ingredients:

1 lb ground turkey

EVOO

1 red onion, sliced

Salt

1/4 cup lime juice (2-3 limes)

2 Tbsp fish sauce ( or soy sauce or coconut aminos)

1 tsp red-pepper flakes

1/2 cups torn mint leaves, more for topping (optional)

1/2 cup chopped fresh cilantro or basil, more for topping (optional)

3 scallions, sliced

1 lb sugar snap peas, trimmed

4 Tbsp cashews or more to taste

1. Heat your iron skillet over medium-high. Add the oil and onion to the skillet, cook 7-10 min, until soft and brown. Add turkey and a pinch of salt, break up the meat. Cook about 8 min until crisp and dark.

2. Meanwhile, mix together lime juice, fish sauce, red-pepper flakes, cilantro, scallions, torn mint leaves. Pour the sauce into the skillet and add the sugar snap peas. Mix everything. Cover and cook for another 3-5 min.

3. Stir in cashews, scallions, basil and mint.
