Kale Salad
1 bunch kale
1/2 red onion, chopped
1 (15oz) can of corn or 2 grilled corn cut from the husks
Pomegranate seeds 5.4 oz store bought or fresh
1 sweet potato or squash, diced
1/4 cup of almonds and walnuts, chopped
Salt, pepper
Lemon juice to your taste

1. Dice sweet potato. In a mixing bowl toss it with olive oil, salt and pepper. Air fry the potato at 400F for 10 min tossing halfway through.
2. Kale belong to dirty dozen. Soak it in a bowl of water mixed with baking soda for 10 min. Rinse well.
3. Place the kale torn into small pieces in a salad bowl. Add olive oil, lemon juice and a pinch of salt. Massage for 2-3 min.
4. Add the rest of the ingredients to the salad. If you feel like you need more olive oil, lemon juice, salt or pepper, please add.
