Fabulous Summer Quinoa Salad

Serves 5-6

For the Salad

1 1/2 cup Quinoa
3-4 persian small Cucumbers, chopped
2-3 tomatoes of your choice, chopped
1 yellow or red bell pepper,chopped
1/2 small red onion, chopped

For the Dressing

Olive oil
Lemon Juice
Salt/pepper
Garlic powder optional
Sunflower seeds (raw or roasted) to sprinkle on top after serving

Cook the Quinoa according to the package instructions. After it is cooled off add all the chopped vegetables. Stir in vegetables, add olive oil, salt and pepper to your taste. Squeeze some lemon juice. After serving on a plate sprinkle with sunflower seeds and enjoy.
