Green Bean Salad With Chickpeas And Tomatoes
Ingredients:
3/4 lb Green Beans, trimmed
2 Tbsp lemon juice
1 Tbsp red wine vinegar
1 garlic clove
1 pint Cherry tomatoes, mixed colors, halved
2 cups cooked chickpeas (from 1 cup dried chickpeas or 1 15-oz can), cooled and drained
3 Tbsp chopped dill, for serving
Pinch of dried oregano, for serving

1. Boil water in a medium saucepan. Add 1 tsp of salt, add the green beans. Cook the beans for 2 min. Pour cold water over and drain in the colander. Blot green beans dry with a kitchen towel.
2. Make dressing. Mix: lemon juice, vinegar, garlic, black pepper, olive oil.
3. Make the salad: add tomatoes, green beans, chickpeas. Salt & pepper. Add dressing. Let it marinade for 10-15 min.
4. Sprinkle with dill and oregano.
