Mendocino Salad Sofie's Add-on

Ingredients:

Kale chopped

Romaine chopped (optional)

1 can  15oz corn or grilled corn

1 can 15oz black beans

red onion chopped

grape tomatoes

avocado 

Cook 1 cup of quinoa

Mix everything together, add the dressing.


Ingredients for the dressing: 

make half if the salad is small

1/2 cup EVOO

1/3 cup apple cider vinegar

1/4 cup honey, use maple syrup for vegan

2 teaspoons balsamic vinegar

1 teaspoon Dijon mustard

2 cloves garlic, finely minced

a pinch of sea salt
