Shakshuka with Feta
Ingredients:
3 Tbsp EVOO
1 large onion, thinly sliced
1 red bell pepper, sliced
3 garlic cloves, thinly sliced
1 tsp ground cumin
1 tsp sweet paprika
1 tsp ground cayenne
2 (15 oz) cans diced tomatoes
3/4 tsp kosher salt
1/4 tsp black pepper
1 1/4 cup crumbled Feta
6 Eggs
Chopped cilantro and Hot Sauce for serving

1. Preheat the oven to 375F. Heat olive oil in a large skillet over medium-low.
Add onion and bell pepper. Cook for 20 min. Add garlic, cook fir 1-2 min until tender. Add Cumin, cayenne, Paprika and cook for 1 min.
Add tomatoes, season with salt & pepper. Simmer for 10 min, until tomatoes have thickened.
Add Feta.
Gently crack the eggs over tomatoes, do not stir. Season with salt and pepper. Transfer the skillet into the oven and bale 7-10 min, until the eggs are just set.
Sprinkle with cilantro and serve with hot sauce.
