Chicken Thighs with Anchovy and Garlic Sauce and Crusty Bread (QUICK)
Ingredients:
4-5 skinless, boneless chicken thighs
1 tsp kosher salt
black pepper
6 garlic cloves, smashed
4-5 garlic cloves, minced for later
EVOO
1 can of anchovy
2 Tbsp capers
Chilie flakes to taste
1 lemon
parsley for serving, optional
Crusty bread as a side

1. Season chicken with salt and pepper. Let it rest.
2. Smash 6 garlic gloves, mince the other one and set aside.
3. Preheat the oven to 350F.
4. Heat olive oil over medium-high in a large stainless skillet. Add smashed whole garlic cloves, the anchovies, capers and chili flakes. Cook and stir 3-5 min.
5. Add the chicken. Cook one side 5-7 min until nicely browned. Flip. Place the pan in the OVEN. Cook another 5-10 min until done.
6. Transfer chicken to the plate. Place skillet back to the heat.
Add minced garlic and lemon juice. Cook 30 sec. Place chicken back to the skillet and cook another 15-30 sec.
7. Serve with crusty bread.
