Hoisin Salmon with Brussel Sprouts in the Oven
Ingredients:
1/4 cup hoisin sause
3 Tbsp lime juice
3 Tbsp olive oil, divided
2-3 garlic cloves, minced
1/4 tsp cayenne pepper
6-8 medium brussels sprouts, cut into 1/4 inch thick slices (1 1/4 cup)
1 red bell pepper, cut into 1/4 inch thick strips (1cup)
1 cup sliced red onion
1/2 tsp salt, divided
1/3 lb skin-on salmon fillet (1 inch thick)
1/2 tsp sesame seeds

1. Preheat oven to 375F. Combine together hoisin sauce, lime juice, 1 1/2 Tbsp Olive oil, garlic, cayenne pepper in a small bowl, set aside.
2. Mix together brussels sprouts, bell pepper, onion, 1/4 tsp salt, 1 1/2 Tbsp olive oil.
Place salmon on a tray, arrange vegetables around it. Drizzle 1/3 cup hoisin mixture on salmon and vegetables. Reserve remaining hoisin mix. Sprinkle salmon with sesame seeds.
3. Bake about 16-20 min. Safe internal temperature for salmon is 145F. Chefs recommend pulling it off the heat 120F to 135F for a more tender, flaky, and juicy texture.
Drizzle 2 Tbsp reserved hoisin mix over salmon and vegetables. Serve with remaining hoisin mixture.
