Healthy Easy Chocolate Power- Energy Balls for Potluck
Ingredients:
1 cup Old-Fashioned Oats
3 Tablespoons unsweetened cocoa powder
1/3 + 1/4 cup unsweetened shredded coconut, divided
1/4 cup fine chopped walnuts
1/3 cup dried cranberries
2 Tbsp dark chocolate Cacao Nibs (optional)
1/4 cup mini Chocolate Chip or chopped Chocolate
1/2 cup Ground Flaxseed
1 Tablespoon Chia Seeds
dash of Salt
1/2 cup of Almond butter
1/3 cup honey
2 Tablespoons Coconut Oil
1/2 teaspoon Vanilla Extract
1/3 cup almond flaked, lightly toasted and crushed (optional)

1. In a glass bowl, stir together the oats, cocoa powder, 1/3 cup coconut, 1/4 cup walnuts, 1/3 cup cranberries, cacao nibs, chocolate, 1/2 cup Ground flaxseed, 1 TBsp Chia seeds, salt.
2. In another glass bowl, melt almond butter, honey and coconut oil in the microwave for 10 sec. If it not enough stir very well and add another 10 sec. Once melted, add vanilla. Pour everything out in the first bowl with oatmeal mix and stir well.
Add more oats if the mixture seems too moist, and add more honey or oil if its too dry.
3. In a bowl N03, stir together 1/4 cup shredded coconut and 1/3 cup almond flakes. Using wet hand, make 1" balls and coat them in the coconut/ almond mix. Place in the fridge to set.
